The mrs has agreed to let me have a couple of corns as long as they are kept in the outdoor shed.

The shed has electric to it so heat mats, stats and lighting will be no problem but there is no other heating. I will fully insulate around the vivs. Will this be okay for corns?

You will need to insulate the whole shed, not just around the vivs. For summer you will also need to think about air conditioning systems to keep the air temps from getting too high.
